I've done it. This Texas gal has officially gone ONE WHOLE WEEK without eating meat! And it wasn't always easy...both of my most FAVORITE meat dishes sat in front of me this week...Heavenly Beef from Gigi's and fajita beef at Fiesta En Guadalajara - and I wasn't tempted to eat either!

While 3 days by NO means constitutes a measurable change, I can say that I'm having an incredibly positive experience and am adapting well. I don't miss meat, I don't miss the way I felt after I ate a meaty meal, I haven't noticed the same level of sweet/carby cravings, and I'm not tired during the day. So far, so good!

So this is week two back in the corporate game, technically my first full week in the office considering I was traveling the first 4 days of last week. So far I've managed to bring my lunch everyday this week, despite being the ONLY person in my office that didn't go out for lunch yesterday.
